Title: Tomato Basil Bread

Yield: 1 Servings

9ozTomato juice*
3cBread flour
1 1/4tsSalt
1 1/2tbOlive oil
3tbDiastatic malt**
1tbBasil
3tbLora Brody's Bread Dough
  Enhancer***
1 1/2tsYeast

Place all ingredients in bread machine and press start.

* I use homemade tomato juice, which has less salt in it. You may want to use less salt if using store bought tomato juice.

** I substitute diastatic malt for sugar, because I don't care for sugar. Besides the malt adds a nice flavor to the bread. If you don't have the malt or don't want to use it, then by all means use sugar.

***Lora Brody's Bread Enhancer is an all natural combination of gluten, ascorbic acid and diastatic malt powder. It is mainly used with rye and wheat flours which lack the necessary gluten to produce a good rise. It is also used in breads that have heavy ingredients such as nuts and fruits. I used it in this recipe because tomato juice is a bit heavy and I wanted a good rise. Feel free to leave it out.
